Also known as mangetout, in French which means "eat it all", that is to say, you can eat the whole pea, including the pod. In China, snow peas are common used in stir-fries, the sweet flavor goes well with things like meat and vegetables.

Possible substitutes:
If you do not have snow peas at hand, try to use sugar snap peas, but they won't have the same flavor for some extent.
Other names:
Chinese sugar peas, mangetout.
Season:
Snow peas are available year-round in many supermarkets.
Purchasing tips:
When choosing snow peas, select snow peas that are crisp and green in color, with firm skin, avoid skins with small circles of rot, wilted or brown spots, or pods with white patches, soft or mouldy tips.
Storage:
Place snow peas in a plastic bag and refrigerate in the vegetable crisper for about 2-3 days.
Preparation and Usage:
Break back the stem end, hold the stem tip and pull it down to the pod to remove any stem and strings on both sides of the pod.
