Spinach:
Spinach is a deep green leaf vegetable with mild flavor and soft texture. It comes into two types, flat-leafed and curly (or savoy) spinach, flat-leafed one is more tender and milder in flavor, especially the baby variety, while the curly or savoy spinch, usually firm with dark leaves that sold in bunches, have a stronger "iron" flavor with a very slight bitter taste and a crunchy texture.

Spinach is in season year-round in many supermarkets.
Purchasing tips:
When choosing spanich, select that with deeply colored, crisp, perky leaves, avoid yellowed leaves, sniff if necessary, there will be some unpleasant odor if spoiled.
Storage:
Store spinach in a plastic bag in the refrigerator for about 2 to 3 days. If you want them keep longer, please steam and chill, then place into plastic bags and refrigerate, about 4 to 5 days or so.
Preparation and Usage:
Cut off the stems, pull off the leaves, then wash thoroughly under cold running water to remove any dirt or sand, repeat this if necessary until clean. Before you use, please blanch them in boiling water until wilted, then drain well in a colander and squeeze out excess water, ready to use, you can add spinach in any salads, or stir fry with meat.
