Sweet potatoes are pointy-ended tubers with sweet flesh. "Yam" is the other name of sweet potato, which is orange in color and sweet-fleshed that you can easily find in the markets. Beauregard, the most common sweet potato, is uniform-sized and orangey skin as well as flesh. Sweet potatoes are staple in some Asian countries.

When choosing sweet potatoes, select the firm ones with smooth skins, avoid the wrinkled or sprouting yams.
Storage:
Do not refrigerate them, just store in a cool, and dark place, usually can keep only a couple of days.
Preparation and Usage:
You can either peel with a vegetable peeler before you cook or discard the skin after you have cooked. In China, people usually bake them whole with the skin on, peel as needed while eating.
