Szechuan Peppercorns:
Szechuan peppercorns are the small dried fruits with rough walls that are usually red brown in color, inside of which are the tiny black seeds. Szechuan peppercorns are toasted and crushed into powder before using in the dishes, in fact, they have a lingering taste in your mouth when you eat. Szechuan pepper is most used in China cuisine.

Purchasing tips:
You can find the best-quality ungrounded and ground Szechuan peppercorns from any Asian markets. Go and find the ground Szechuan peppercorns from a high-quality spices grocery, if anything.
Using tips:
If your peppercorns contains a lot of thorns, please discard them before you crush them, after crushed, please discard all the black seeds, they are not edible at all. You are highly recommended to crush Szechuan peppercorns along with other spices, such as black peppercorns, cinnamon, white peppercorns, cumin, or fennel. Ground Szechuan peppercorns are usually used at the last step, that is to say, before serving, sprinkle the food with ground Szechuan peppercorns along with other spices.
