The winged bean is a member of the legume family, extensively cultivated in Burma and India. The tender pods, which are the most widely eaten part, are usually green in color and crispy in texture, however, the inside beans are similar to soybeans in shape. The texture of winged bean is similar to green beans, and flavor likes cranberry or asparagus. It is high in protein than any other beans, thus it is used as a flour in the hot regions where it grows.

Winged beans are available year-round in many supermarkets or specialty produce markets.
Purchasing tips:
Select small beans with no wilted or brown spots.
Storage:
Store them in plastic bags, then refrigerate, for about 2-3 days.
Preparation and Usage:
Rinse thoroughly under cold running water to ramove and sand or dirt, pat dry and then trim off the tough stems, stir fry with meat for a side dish.
