Winter Melon

Winter Melon:
Winter melon, or the Chinese winter squash, is similar to a large watermelon by shape, it has tiny hairs that are somewhat sharp covered its dark green skin as well, the flesh and seeds inside is as white as snow, and the flesh has a firm texture as well as a mild sweet taste. Winter melon has merely slight flavor, however, it can easily absorbs the flavor of other foods that cooked with, so it is usually used in stir-fries and winter melon soups in Chinese cuisin.

Dong Gua (Chinese), Chinese winter squash, white gourd, wax melon, wax gourd, ash melon, ash gourd, white pumpkin (Indian).
Purchasing tips:
You can purchase winter melon wholly, but normally the markets provide cut pieces, which is more convenient.
Storage:
Store cut slices in a plastic bag, then refrigerate in the vegetable crisper, they can last for about 3 - 4 days.
Usage:
Rinse well under cold running water, then peel the skin, scoop out the seeds and then cut the firm flesh into cubes or slices, you can either stir fry winter melon with meat or make a famous winter melon soup along with chicken breast, mushrooms, and other seasoning.
