Chinese Dumpling

Chinese dumpling is one of the most famous dumplings in the world, you will find it in any of Chinese restaurant, especially in north America. During Chinese lunar new year, Chinese people always get together making Chinese dumplings and talking about the things happened last years. In rural area , people prefer to wrap some coins in them for there is a popular belief that the one who eat the coin dumping will make a good fortune in the next year.
Strictly speaking, Chinese dumplings include many varieties such as zongzi(rice dumplings) , baozi, and the most famous and common one---- jiaozi. Jiaozi ,which consists of ground meat or combination of minced vegetables and ground meat, is a crescent-shaped
dumpling. The wrapper of dumpling, with a radius of ong inch., is usually round. Compare with wonton, wrapper of jiaozi is a bit thicker.
After having managed the fresh dumplings. You can choose one of three ways to cook them. Boiling is the most common and healthy way. The key to boil the dumpling is grasping the appropriate time to add cool water during the boiling . When the dumplings are floated and water is boiling, add a bowl of water quickly. After three times additions the dumplings are cooked. Pan frying is another famous method. In china ,we call this kind of dumpling potsticker. Pan is the most common utensil in western country so you can conveniently cook dumpling in this way. The last method is steaming which is the best way because only in this way the most tasteful cooking liquid of dumpling can be totally kept in it. Chinese people usually steam dumplings in bamboo steamer or steam box, and because of this ,we usually call it small steamed bun. So if condition permits, we strongly recommend you to cook dumpling in this way.
Dumplings are eaten with a soy sauce-based dipping sauce that may include vinegar, garlic, MSG, mustard, hot sauce, and sesame oil. You can mix the dipping sauce in accordance with your taste.
Other special and famous Chinese dumplings as follows
Zongzi:
Zongzi, or glutinous rice dumpling is a traditional Chinese food, made of sticky rice stuffed with different fillings ,such as red jujube, brownsugar, sweetened bean paste or even meat,and wrapped in reed orbamboo leaves. They are usually cooked by steaming. you can dip sauce or sugar depending on your taste.
Tangjiao:
Tangjiao is kind of steamed bun in triangular shape stuffed with sugar, which is one of most popular Chinese breakfasts and dim sums.
steamed stuffed bun or bao zi:
Compared to jiaozi,the wrapper of baozi is usually a little bigger, with a radius ranging from 1 inch to 1.5inch . The dough of baozi , added in leaven or mixed with hot water ,is more tender and softer. Sealing the baozi wrapper is kind of feat for beginners. Chinese maters can make a beautiful 18- pleat pattern. steamed stuffed bun or baozi is commonly steamed in a big bamboo steamer ,some of which are even more than one meter in width.
